Ingredients:
- 1 medium large fresh pineapple
- 2 c. frozen raspberries
- 1-2 T. sugar
- 6 waffle cones
Procedure:
Remove crown and base of the pineapple and peel. Slice into ½ inch pieces, lengthwise. From an end piece, reserve 1/3 cup chopped pineapple. Spray each side of the pineapple with Pam and place on a hot grill for about 3-4 minutes each side. Cut into "Fries". Puree the thawed berries along with the sugar. Strain.
Return to the blender with the reserved pineapple and puree.
To plate:
Divide the pineapple among the waffle cones and top with some of the "ketchup". Pass the remaining ketchup.
