Ingredients:
- 1.5 lbs. green beans, washed, trimmed, cooked until al dente and shocked.
- 2 lbs. assorted mushrooms, cleaned and sliced
- 2-3 T. minced garlic
- 1-2 T, minced thyme
- 4 T. butter
- 2 T. AP flour
- 1 cup half and half
- 1 cup heavy cream
- ½ cup shredded parmesan
- ¼ cup toasted pine nuts or toasted slivered almonds
- 1 cup shallots, sliced thin and fried
Procedure:
Preheat oven to 375 degrees.
Melt 2 t, of butter in medium sauté pan and add the garlic and thyme and mushrooms. Sauté until the mixture is dry. Toss with the beans and adjust seasoning. In a saucepan, melt the remaining 2 T. butter. Add the flour, half and half, cream and bring up to a simmer. Let it cook for a about 4-5 minutes, stirring constantly.
Add the parmesan and adjust seasoning.
