Ingredients:
- 3 C. Mixed berries (strawberries, blueberries, blackberries etc.) washed, hauled and sliced in needed)
- 6 T. Sugar
- 1 ½ C Flour
- 1 Tsp. Salt
- 2 Tsp. Baking Powder
- 6 T. Unsalted butter, cut into small pieces
- ¾ C. Milk
- Your choice of Ice Cream or Whipped Cream
Procedure:
Place berries in a medium bowl, sprinkle with 5 T. of sugar and allow berries to sit at room temperate for 30 minutes. Preheat over at 400 degree. Sift flour, salt, baking powder and 1 T. sugar into a bowl. Cut 4 T. of the butter into the flour mixture until the result resembles coarse crumbs. Mix in milk. On floured surface, shape dough into a biscuit 2 inches thick and 6 inches in diameter. Bake on an ungreased cookie sheet until just golden brown (about 15 minutes) Cool slightly then slice horizontally. Spread remaining butter on cut sides.
Place bottom half of biscuit on a plate and spoon half the berries on top. Top with the other half of the biscuit and top with remaining berries. Place a large scoop of ice cream or whipped cream along side.
